Gelatin
Gelatin is a macromolecular hydrophilic colloid, which is the product of partial hydrolysis of collagen. According to its
properties and uses, it can be divided into edible gelatin and industrial gelatin.
Feature:
1. It is a colorless, odorless, nonvolatile, transparent and hard amorphous solid substance 2. It is soluble in hot water and insoluble in cold water, but can slowly absorb water, expand, and soften. Gelatin can absorb 5-10 times the weight of water.
